Hi. What you are to do is to first add it as a second email address > then you will have the option to remove the only one you have now. Go to Settings > Accounts > Google > Add Account > Existing > .... When done with the signing, go back to Settings > Accounts > Google > tap the one you wish to remove > tap Remove account > ... Let us know should you still have issues.
